‘Water is not just water,’ says Patina Restaurant Group’s water sommelier

As part of the 25th anniversary celebration of Patina Restaurant Group’s namesake restaurant, Patina, guests can take a number of hands-on courses from world-class culinary and hospitality industry professionals.
Among those offering an educational session is Martin Riese – a general manager and certified water sommelier at Patina Restaurant Group, which became part of Delaware North in May 2014.
Riese, who serves as general manager at Patina Restaurant Group’s Ray’s and Stark Bar in California, is hosting a course called Water 101, which runs through June 3. The course teaches guests the fundamentals on water, finding out fact from fiction and discovering five dramatically different waters. It also offers small bites from Patina’s signature artisanal cheese selection.
“Water is essential to life,” Riese said. “But not all waters are the same. Water has a significant impact on the way we taste food – and can be paired in a manner similar to wine.”
