As football season hits its stride, Delaware North Sportservice is once again in the spotlight during primetime games.
On the Nov. 10 Monday Night Football game at Lambeau Field in Green Bay, Wis., former NFL star Jason Kelce laced up his skates for a few laps around the Delaware North-operated skating rink at Titletown. Embracing the spirit of the region, Kelce invited one Philadelphia Eagles fan and one Green Bay Packers fan from the crowd to join him for a quintessentially Wisconsin experience – a cheese curd tasting, hosted by Delaware North Sportservice Executive Chef Zac Ladubec.
Ladubec guided Kelce and the fans through the tasting, and Kelce declared the Packers fan winner of the tasting.
While the cheese curd challenge was the night’s highlight, there’s an even richer story behind the scenes at Lambeau Field.
Multiple local media outlets highlighted the partnership between Delaware North and Rooted In, a local nonprofit whose mission is to increase access to nutritious food in the Green Bay community. TV stations WLUK, WFRV, WISC, WGBA, WXOX and WBAY covered the initiative, as well as the Green Bay Press-Gazette newspaper.
The partnership ensures that the food left in Lambeau’s kitchens after game day doesn’t go to waste. Instead, Rooted In collects surplus ingredients and transforms them into nutritious, complete meals, which are distributed to Rooted In’s pantry partners to support those in need of food.
“A lot of it comes from our premium levels,” said Ed Fritsch Koehl, food and beverage manager for Delaware North at Lambeau Field. “Cooked barbecue chicken, pulled pork, mashed potatoes, stuffing, chili. I love the idea that we’re doing something really good for the climate, while at the same time providing the local community with food that can be used.”
The idea came after Rooted In collected more than 7,000 pounds of food after Lambeau Field hosted the NFL Draft earlier this year.
