Inside the Chef’s Kitchen: Meet the culinary leaders behind NFL game day

Delaware North Sportservice is going inside the kitchen with the chefs who bring game day to life across some of football’s most iconic venues. From Wisconsin classics to Northeast Florida flavors and scratch-made favorites inspired by New York and New Jersey, these culinary teams are bringing a strong sense of place to the 2026 NFL season.

Sportservice operates foodservice at Lambeau Field in Green Bay, Wis., and EverBank Stadium in Jacksonville, Fla., and it operates both foodservice and retail services at MetLife Stadium in East Rutherford, N.J. The executive chefs from each venue were interviewed ahead of the season.

Zac Ladubec, executive chef, Lambeau Field

For Executive Chef Zac Ladubec, cooking at Lambeau Field is personal. A lifelong Green Bay Packers fan who grew up just an hour away from the venue, Ladubec now gets to create game-day food for friends, family and fellow fans.

His approach balances Wisconsin staples with new ideas, building on familiar favorites such as brats, beer and cheese while finding ways to give them an unexpected twist.

Steve McQueeny, executive chef, EverBank Stadium

At EverBank Stadium, Executive Chef Steve McQueeny is leaning into flavors that are distinctly Jacksonville. One standout is the Riverside Heatwave, featuring shrimp tossed in datil pepper sauce alongside Buffalo chicken and crispy tots.

McQueeny says game day requires managing thousands of pounds of products and coordinating preparation and distribution across concessions, clubs, suites and premium areas, each with its own menus, equipment and staffing needs.

Mike Butler and Camilo Baquero, executive chefs, MetLife Stadium

Executive Chefs Mike Butler and Camilo Baquero draw inspiration from the diverse food cultures found throughout New York City and northern New Jersey for their MetLife Stadium menus.

For Butler, the philosophy comes down to three words: local, simple and authentic. This season includes a Jets partnership with Parmigiano Reggiano, with the ingredient appearing in several dishes.

Baquero, meanwhile, is excited for the Against the Grain Filet Mignon Sandwich, a carved-to-order filet mignon sandwich available in regular concessions, along with the Sunday Sauce Special at Nonna Fusco’s Pasta Fresca.
