1919 Kitchen & Tap, the Delaware North-operated restaurant at Lambeau Field in Green Bay, Wisc., is sharing two of its favorite fall flavors:
1919 Mason Jar Apple Crisp with Cheddar Streusel
Yield: Seven 8-oz. jars
Ingredients
Filling:
- 8 cups Granny Smith apples, large dice
- ¼ cup sugar
- 2 teaspoons ground cinnamon
- ¼ teaspoon dry ground ginger
- ¼ teaspoon ground cloves
- 3 tablespoons AP flour
- 1 teaspoon Bourbon vanilla bean paste
- pinch of sea salt
Streusel:
- 1 cup AP flour
- 1/2 cup brown sugar
- 8 tablespoons butter, grated
- 3/4 cup 4-year aged cheddar cheese, grated
Instructions
For the Streusel combine the flour & brown sugar and stir together. Combine the grated cheese and butter with the sugar flour mix, using your hands work the butter into the dough until small pea-sized crumbles form and the flour is worked in evenly.
Preheat oven to 350°F. In a large bowl, toss together the apples, sugar, flour, vanilla, salt and spices, pack the apples into short 8-ounce mason jars. Sprinkle the crumble over the apples. Bake at 350 degrees for 15 minutes or until the crust is golden brown & filling bubbly. At 1919 Kitchen & Tap we serve this with homemade pumpkin pie ice cream & pumpkin spice caramel!
Cranberry Cobbler Drink
Cranberry Sauce Ingredients
- 2 quarts water
- 3lbs fresh cranberries
- ½ cup sugar
- 1 orange
- 1 lemon
- 2 pears
Cranberry Sauce Instructions
Boil cranberries in water until they start snapping. Turn off heat and remove cranberries while saving the infused water. Blend half the cranberries with a cup of infused water. Repeat with the second half. Take the blended cranberries and place in a sauce pan. Juice both the lemon and orange and add to the blended mix. Add the 1/2 cup of sugar and heat till boiling. Remove from heat and chill.
Ginger Snap Rim Ingredients
1 pack of ginger snap cookies
1/3 cup brown sugar
Cranberry Sauce Instructions
Blend one pack of ginger snaps and a 1/3 cup brown sugar until smooth.
Cranberry Cobbler Drink Ingredients
- 2.5oz Crown Royal Vanilla
- .75oz Cranberry Sauce
- .75oz Pear Juice
- .75oz Cranberry Juice
- .75oz Simple Syrup
- Ginger Snap Rim
Cranberry Cobbler Drink Instructions
Fill tin with ice and add Crown Royal Vanilla, Pear Cranberry Sauce, Pear Juice, Cranberry Juice and Simple Syrup shake and pour into a glass rimmed with ginger snaps.
