We recently caught up with Glenn MacNayr, Delaware North’s executive chef at the company-owned-and-operated Sea Crest Beach Hotel on Cape Cod in Falmouth, Mass.

Delaware North acquired the beach-front hotel in July 2016.

In five words or less, describe your food.
Fresh, cooked and presented perfectly (modern American cuisine).

Who was your biggest cooking influence?
The first executive chef I trained under. He taught the grit and determination that it takes to become a chef. He really believed in me at a young age and told me constantly that I had what it took.

Fill in the blank. If you weren’t a chef, you’d be…
A police officer or a culinary instructor.

But…since you are a chef…what has been your favorite moment in a Delaware North kitchen (or in general with the company)?
Only being with the Delaware North family for a short while, my biggest moment was being able to host the Parks and Resorts General Managers Conference at Sea Crest. It really gave myself and the great team around me the chance to showcase what we are capable of doing.
