Delaware North Australia earlier this month developed a one-of-a-kind “birthday cake” for horses from Living Legends, an international equine welfare charity and retirement sanctuary for champion racehorses. The sanctuary is heavily supported by Victoria Racing Club at Flemington Racecourse in Melbourne, Australia, where Delaware North serves as hospitality provider. 

The Southern Hemisphere recognizes Aug. 1 as the official birthday for racehorses, and the common birthday system allows the racing and equestrian industries to group horses into fair age categories for competition. 

Pictured above is Delaware North Australia Culinary Director Markus Werner, who created a carrot cake recipe made without sugar, salt or spices. It was topped and glazed with a wholesome blend of lucerne hay, cooked pumpkin and sweet potato, creating a naturally sweet, colorful finish. The cake was decorated with heirloom carrots, baby beets, fresh apple, parsley and mint, giving it a vibrant, eye-catching presentation. 

“The guests clearly appreciated the attention to both flavor and appearance,” Werner said. “Safe to say, it disappeared much faster than it was made, which is always the best compliment a chef can receive.” 


Luke Combs made history as the first solo country artist to headline at Wembley Stadium in London, playing three sold-out shows July 31-Aug. 2, as part of his “My Kinda Saturday Night” tour. Combs was originally set to play at Wembley one night but increased his stint to three nights due to demand.  

Delaware North U.K., which has served as hospitality provider at the venue since 2007, served menu items inspired by Combs’ country music lineup, including: The Hammer Bowl (mac-and-cheese topped with slow-roasted beef shank), Lovin’ on Nachos Platter, Loaded like these Fries, Getting’ Bold Burger, Carolina Hot Dog and Hot Honey Hurricane Chicken & Chips. 

The American-themed food items were a hit, with the venue selling nearly 19,000 Hot Honey Hurricane Chicken & Chips across the three nights alone. Fans washed down food items with about 1,300 barrels (nearly 375,00 pints) of beer across the three nights.
