Dinner on the Diamond

Patina Catering partnered with Delaware North Sportservice to deliver a fully integrated culinary experience at the fifth annual Dinner on the Diamond on April 30, an on-field fundraising event at Petco Park, where Delaware North serves as hospitality and retail partner.

The event featured a large-scale reception, plated dinner and dessert experience. The menu was curated by Carlos Gaytán, a Michelin-starred chef partner of Patina Group, and brought to life by a collaborative culinary team.

The onsite execution was led by Petco Park Executive Chef Phillip Dumlao and Executive Sous Chef Anthony Lucido.  Representing Patina Group were Jacqueline Kelly, director of culinary for Patina Catering; Michael Gabriel, corporate director of pastry; and Josué Rivera Borrero, executive pastry chef at Space 220 in Orlando.

Joining from Paseo, Céntrico and Tiendita were Genio Mostajo, executive chef; Rudy Lopez, executive chef; and Carlos Rodriguez, pastry chef. Paseo, Céntrico and Tiendita are Patina Group concepts in partnership with Gaytán at Downtown Disney in California.

Guests were welcomed with passed hors d’oeuvres before transitioning to a plated dinner, with nearly 600 meals served in fewer than 20 minutes.

Menu highlights included shrimp-stuffed zucchini blossoms, Gaytán’s Caesar salad, filet mignon, chiles rellenos, cocoa spiced cake and traditional Mexican pastries.

Patina Catering supported a Mother’s Day Celebration in April, hosted by Baby2Baby, a nonprofit organization that distributes diapers, formula and other necessities to families experiencing poverty. Patina played a key role at the event, welcoming over 500 mothers and their children during a day centered on care, community and celebration.

Held in Los Angeles, the event brought together partners and volunteers to distribute essential items, including diapers, formula, groceries and clothing, along with Mother’s Day gifts for families in beed.

Patina Catering provided individually packaged picnic-style lunches for families, with menu items such as Tuscan chicken sandwiches, roast beef sandwiches, vegan club sandwiches and children’s meals.

United Elevated

In March, Patina Catering delivered a multiday culinary program for United Elevated – a brand and media experience hosted by United Airlines in a converted hangar at Los Angeles International Airport.

The program served media, executives and operational teams with breakfast, lunch, all-day hospitality and buffet-style service. Menus emphasized freshness, comfort and scalability for continuous service over multiple days.

Menu highlights included house-made energy bites; Italian-inspired sandwiches and wraps; herb-roasted chicken with macaroni and cheese; and carne asada and wild mushroom tinga with cilantro-lime rice and tortillas.
