Delaware North’s team at Sydney Cricket Ground (Sydney, Australia) recently played host to 500 VIP guests – including guest of honor Sarah Ferguson, Duchess of York – for the annual St. Vincent’s Life Ball, which raised $2.7 million (Australian currency) for the intensive care unit of St. Vincent’s Hospital Sydney.
The event had everything: royalty, celebrity, technology and – of course – wonderful hospitality.
Guests were served Perrier Laurent Champagne upon arrival on the hallowed Sydney Cricket Ground turf. They proceeded to the dining room, where they were greeted by Dr. Robot (a fully functioning robot doctor) and served canapes, followed by a sumptuous three-course meal.
Executive Chef Stuart Webb and his team – in consultation with Celebrity Chef Justin North – created an exquisite menu:
- Entrée: Marinated Yellow Fin Tuna, Citrus Salad, Miso Emulsion and Vietnamese Dressing
- Main Course: Caramelized Chicken Breast, Prosciutto, Sweetcorn and Basil Veloute, Roast Cauliflower Florets
- Dessert: Steamed Ginger Pudding, Butterscotch Sauce, Date Ice Cream and Candied Mandarin
Entertainment was provided by renowned Australian artist Anthony Callea, and guests were also treated to an oxygen bar.
