Longtime sports hospitality leader Adrian Dishington named chief operating officer of Delaware North Sportservice

Delaware North announced today that Adrian Dishington has joined the company as chief operating officer of its Sportservice division. He will relocate with his family to Buffalo, N.Y., and will be based at the company’s global headquarters.

As chief operating officer of Delaware North Sportservice, Dishington will oversee food, beverage and retail operations that generate more than $1 billion in combined annual revenue at venues spanning the NFL, MLB, NHL, MLS and minor league baseball. He will also manage the division’s operating staff and maintain close relationships with clients.

Dishington steps into a role most recently held by Joe Sims, a longtime Delaware North leader who announced his intent to retire in 2026. Sims will continue to serve in an advisory capacity through the end of his tenure.

Dishington brings more than 20 years of progressive leadership experience in food and beverage operations across the sports and entertainment industry. Most recently, he served as vice president of operations for Levy Restaurants, where he oversaw food and beverage operations across Northern California and the Pacific Northwest. His portfolio included more than a dozen high-profile venues, including Levi’s Stadium, Chase Center, Moda Center and Lumen Field.

Prior to his role at Levy, Dishington served as vice president of food, beverage and retail operations for Oak View Group at Climate Pledge Arena, where he worked closely with Delaware North to launch the world’s first carbon-neutral arena. The collective results included the implementation of advanced point-of-sale and frictionless technologies, the development of a local sourcing program and record-setting per capita spending.

Earlier in his career, Dishington held senior leadership roles with Centerplate (now Sodexo Live!), including senior vice president for the West Coast and Hawaii and chief operating officer for Centerplate Europe. He began his career with Centerplate and Aramark, building a strong foundation in venue operations and hospitality leadership.

Dishington holds a degree in hospitality administration and management from the University of Dundee – Duncan of Jordanstone in Scotland.
