Delaware North unveils new menu lineup for 2025 season at Highmark Stadium

ORCHARD PARK, N.Y. (Sept. 3, 2025) — Delaware North, the hospitality partner of Highmark Stadium, today announced a bold and flavorful lineup of new menu items for the upcoming Buffalo Bills season. Fans can expect a culinary experience that celebrates regional favorites, creative twists and elevated stadium fare across concessions, clubs and suites.

New twists on a returning favorite

The Battle Boat, a fan-favorite item first introduced last year that features a massive bed of waffle fries topped with half Buffalo-style ingredients and the other half as a nod to the opponent, will be returning. With the Baltimore Ravens visiting Highmark Stadium for a Week 1 showdown on Sunday Night Football, the first battle boat of the season will feature:

  • Buffalo Side:  Topped withsmoked kielbasa, sour kraut, sweet and sour red cabbage, crispy bacon, caramelized onions, Weber’s Mustard and Horsey Sauce.
  • Baltimore Side: Topped with a smoked salmon BLT (bacon, lettuce, tomato) mix of crumbled bacon, crumbled salmon, diced tomatoes, spring mix and lemon dill aioli or avocado cream.

The Battle Boat is available at the Miller Lite Brew Pub (Section 125), Toyota Club and Pepsi West Club.

Additional new items in concessions include:

  • MVP – Grilled flank steak with jalapeno relish, caramelized onion aioli, arugula and onion rings on a ciabatta roll. Available at the Miller Lite Brew Pub. 
  • All-Dressed Chicken Tenders – 11 different spices to mimic the Canadian All-Dressed Lays Chips. Available at the Miller Lite Brew Pub.
  • Chickpea Blitz – Chickpea crumble with cucumber, shredded lettuce, pickled onions and roasted red pepper hummus in a gluten-free wrap. Available in the Sideline Clubs and Bud Light Club, along with all Tim Horton’s locations in general concessions. 

Regional flavors of visiting team join the menu in clubs

Each week, a new menu item will be featured in the Sideline Clubs, Dunn Tire, Toyota, Pepsi East and Pepsi West – highlighting the flavors of the visiting team’s region.

  • Mr. Crabs (Baltimore) – Fried crab cakes on a Bavarian pretzel roll with mango salsa and fresh cilantro.
  • Cubano (Miami) – A nod to South Florida, this classic sandwich joins the lineup for Thursday Night Football.
  • Shrimp Po Boy (New Orleans) – Crispy fried shrimp in a split-top bun with lettuce, crispy onions, and Sriracha aioli.
  • Lobster Roll (New England) – Chunky lobster meat with pickled onions and bibb lettuce in a New England-style bun.
  • The Sleeper (Kansas City) – BBQ pork on a brioche roll with apple slaw, mac & cheese bites, and jalapeños.
  • Pirates Treasure (Tampa Bay) – Floridian-style crispy chicken tacos with spicy slaw and Sriracha aioli.
  • Eye of the Tiger (Cincinnati) – Frosted Flakes-encrusted chicken breast nestled between Belgian waffles, drizzled with Sriracha maple syrup.
  • Philly Potato Head (Philadelphia) – A hearty Philly cheesesteak stuffed into a baked potato with pepper jack and provolone.
  • Flight Crew Feast (Jets) – A giant cheesesteak hoagie with jalapeños and arugula for the regular-season finale at Highmark Stadium.

The clubs will also feature a variety of new staples on the menu, including:

  • DawkSide – Marinated jerk chicken sandwich with mango pineapple salsa and cilantro aioli on a pretzel Roll. Available at Dunn Tire and Pepsi West Clubs in the 716 Stand.
  • Pork Knox – Pulled pork with pickled jalapenos, beer cheese and crispy onions on an amoroso roll.
  • Indian Spiced Short Rib – Coriander, garam masala and garlic-spiced short rib with cilantro chutney.
  • Chili Crisp Chicken Sandwich – Brined and hand-breaded chicken breast with an apricot chili crunch on a roll.
  • Spitako Chicken – Halal chicken thigh, saffron rice, hummus, heirloom tomatoes, cucumber, goat cheese and cilantro. Served with pita and dill sauce.

Suite menu delivers bold flavors with Tuna Poke Nachos, Steak Frites and more

  • Tuna Poke Nachos – Seasoned Ahi tuna over golden wonton crisps, topped with mango, seaweed salad, and Sriracha mayo at Suites
  • Mediterranean Salad – Spinach greens with cucumbers, heirloom tomatoes, couscous, radicchio, goat cheese and thyme lemon vinaigrette at Suites
  • Beef Tenderloin Sliders – Sliced tenderloin with Boursin cheese, roasted red pepper and chimichurri aioli on a potato slider roll at Suites
  • 4-Cheese Mac & Cheese – Rich and creamy blend of four cheeses baked with pasta at Suites
  • Steak Frites – Flank steak with house-cut potato wedges and wild mushrooms – topped with a garlic-herb compound butter.
  • Taquiera Taco – Braised beef, lime rice, cowboy beans, guajillo pepper, jimaca slaw, salsa verde in flour tortillas with sour cream and pico de gallo.
