Hometown concepts bring Texas flare to DFW’s Terminal A
BUFFALO, N.Y. (May 17, 2011) – Delaware North Companies Travel Hospitality Services, one of the world’s leading airport food and retail providers, announced has been selected to bring Texas favorites Salt Lick Bar-B-Que and Twisted Root Burger to Dallas/Fort Worth International Airport (DFW).
The restaurants will feature innovative offerings and touch-screen ordering technology while serving delicious hometown favorites inside DFW Terminal A. Delaware North also operates four concepts in Terminal D: Railhead BBQ, Einstein Bros. Bagels, 360 Burrito and Fuddruckers.

Named one of the top 15 favorite airport dining spots in the U.S. by Condé Nast Traveler magazine, The Salt Lick Bar-B-Que offers a true sense of Texas pride. Created in Texas Hill Country by Thurman Roberts in 1967, The Salt Lick has garnered attention and numerous awards, including the number one spot in the Zagat 2011 guide as Austin’s most popular restaurant.
At DFW, customers will enjoy their meat taken directly from a live pit and carved in front of them, just like it has been done at the original The Salt Lick for over 50 years.
Delaware North operates Salt Lick concepts at Austin-Bergstrom International Airport and Will Rodgers World Airport in Oklahoma City, serving platters and sandwiches of spicy smoked or jalapeno sausages, juicy smoked turkey, tender sliced brisket, tangy BBQ chicken and melt-in-your-mouth ribs. The menu also includes a traditional country breakfast starting with fresh eggs, golden hash browns, juicy sausage and flaky biscuits and gravy or a variety of savory breakfast tacos for morning travelers.
At DFW, Delaware North will offer an exclusive line of Gifts-to-Go at The Salt Lick Bar-B-Que, a fully cooked and frozen brisket with The Salt Lick’s famous BBQ sauce, BBQ gift packs, dry rub or Salt Lick salsa. “This way, travelers can take food with them to their next destination, or for those Dallas-bound, pick up dinner on the way home,” King said.
Named one of the top eight new restaurants defining culinary life in Dallas, and featured on Food Network’s “Diners, Drive-Ins and Dives,” Twisted Root Burger Co. is the only chef-driven burger restaurant in Dallas. Delaware North has collaborated with the innovative team of chefs at Twisted Root — Jason Boso, Quincy Hart and Steve Thompson — to bring a first class gourmet burger concept to DFW.
Buffalo, elk, venison, lamb and ostrich are included in the lineup of mouth-watering, exotic gourmet burgers, along with turkey, veggie and of course, beef. Customers can add their own creativity to a juicy burger by choosing from a list of combinations and toppings such as chipotle, guacamole and cheddar with fried onion strings or blue cheese jalapeno. Other items include savory fried green beans with creamy peppercorn ranch sauce, Quincy’s pickles, fresh salads, homemade ice cream, beer and wine.
In the spirit of Delaware North’s award-winning GreenPath® environmental management system, the company will use environmentally-friendly construction materials when building the new restaurants wherever possible, including recycled and reclaimed local, natural resources and LED lighting.
