Delaware North awarded new business at Boise Airport

New concepts feature a mix of local and national brands, including The STIL, Blue Sky Bagels and Starbucks

BOISE, IDAHO (July 1, 2024) – Delaware North, a global hospitality and entertainment company, today announced it has been selected to continue to operate and expand all food and beverage offerings – a mix of Idaho-based concepts and national brands – at Boise Airport (BOI).

The foundation of the reimagined BOI experience is a compelling set of brands, each individually selected and carefully adapted to meet the needs of traveling guests. The new 10-year contract was approved by the Boise City Council following a competitive solicitation process. A timeline for implementation will be announced soon.

Building on the company’s 10 years of partnership with the airport, Delaware North will ensure every meal, moment, detail and dwell time is a celebration of what makes Boise a city for everyone.

“We are immensely proud of our accomplishments in creating an experiential foodservice program that embodies the unique spirit of Boise,” said Scott Socha, a group president for Delaware North who oversees the company’s travel division. “Our offerings reflect the city’s vibrant outdoors, thriving art scene and rich culinary traditions while catering to the diverse tastes of our travelers. For the past decade, our commitment to quality and variety has defined our presence in Boise, and we’re excited to build on this strong foundation in the years to come.”

With a focus on highlighting brands that have contributed to Boise’s culture in a meaningful way, Delaware North’s BOI program includes the following concepts:

Presecurity:

  • Treefort Food + Drink – A full-service restaurant inspired by the locally owned and operated Treefort Music Fest and Treefort Music Hall. At Treefort Food + Drink, travelers will enjoy a lively sit-down dining experience featuring breakfast, lunch and light dinner fare complemented by a full bar.

“The Treefort and Duck Club team is excited for the opportunity to represent the importance of Boise’s music and arts community to incoming and outgoing travelers in the Boise airport,” said the Treefort Fest team. “Treefort isn’t just about music – it’s about community, discovery and unforgettable experiences. We can see now where Boise’s artistic spirit takes center stage, sparking a sense of adventure and excitement in every traveler who walks through those doors. We have great hope that it will help continue to bolster the visibility of Boise’s growing music scene.”

  • Flying M To Go – In addition to the complete Treefort Food + Drink menu available to go, our Flying M To Go window will serve Flying M’s locally roasted coffee, a variety of breakfast options and a robust selection of freshly made sandwiches.

Center Core:

  • Bardenay – A proven passenger favorite and the nation’s first restaurant to be granted a distillery license, Delaware North will reimagine every detail to update the experience, meet the needs of core customers, and create a concept that’s bold, bespoke and authentically Boise.

“Bardenay has been proud to call the Boise Airport family for the past decade. It’s given us the incredible opportunity to share our Idaho-made spirits and hospitality with visitors from all over the world,” said Bardenay founder Kevin Settles. “Seeing them experience the Bardenay magic firsthand has fueled our growth as an employee-owned company, allowing us to invest in our team and bring even more Boise charm to the airport. We believe Bardenay plays a vital role in showcasing Boise’s character and charm, and we’re dedicated to remaining a welcoming haven for departing and arriving visitors.”

Within the Bardenay footprint will be a climate-controlled exhibit case curated in partnership with the Boise Art Museum. This exhibit will directly support the airport’s Arts Master Plan and its goal to create memorable moments at BOI that add comfort, inspiration and beauty to the traveler experience.

  • The STIL Scoops, Pints & Pours –The STIL stands for “The Sweetest Things in Life.” The quality-driven brand crafts small-batch ice cream from Idaho milk and cream, infusing add-ins and flavors inspired by the local landscape and lifestyle. The STIL creates vegan varieties from coconut cream and offers a selection of signature, booze-infused creations. Ice cream lovers can pair their favorite scoop with a curated selection of local beers and wines.

“Since 2017, The STIL has been a cherished part of the Boise community, inviting customers to create memories around their ‘Sweetest Things in Life,’ while enjoying a delightful ice cream experience,” said Daniel Sell and Kasey Allen, founders of The STIL. “Imagine bringing that same joy to travelers at the Boise Airport. For some, it could be the perfect start to a long-awaited vacation, a taste of home before they depart, or a sweet pick-me-up after a tiring journey. The STIL isn’t just ice cream, it’s a reminder of what makes life sweet. We are grateful for this opportunity to share that feeling with everyone who passes through the Boise Airport!”

  • Waffle Me Up –From its humble beginnings as a food truck in 2016 to its brick-and-mortar location of today, Waffle Me Up has won over the hearts and loyalty of Boise residents with its signature fare. This family-owned Boise breakfast and lunch destination specializes in handcrafted Belgian-style liège waffles, sure to draw in travelers and locals.

“Waffle Me Up isn’t just about delicious waffles, it’s about creating joy with every bite,” said Hector Garcia, founder of Waffle Me Up. “We’re a local, family-owned business that bootstrapped its way from small markets to a full restaurant. Being at the Boise Airport will be a dream come true, allowing us to share our story of resilience and community focus with travelers.  We believe in giving back, collaborating with shelters, and inspiring new entrepreneurs – all while serving up the highest quality waffles Boise has to offer.”

  • Blue Sky Bagels –Blue Sky Bagels is a local chain specializing in handcrafted bagels, cream cheese spreads and simple café fare. Founded by Mark Hansen, a Boise native with a passion for baking and community, Blue Sky Bagels started in 2002 as a cozy downtown shop. Steady demand led to the opening of additional locations for a total of four Blue Sky Bagels outlets today.

“Already, we’re one of the last stops for many people heading out of town to grab bagels so they can take a part of Boise with them on their journey,” said Mark Hansen, owner of Blue Sky Bagels. “Now it will be easier for those people, and others, to get a taste of Boise for their flights and beyond. It is an honor to be a Boise ambassador brand welcoming people on their arrival to our beloved city.”

In addition to these local concepts, highly recognizable brands such as Starbucks, Protein Bar & Kitchen, Pizza Hut and Wendy’s will be available to passengers at BOI in the Center Core.

Concourse B:

  • Flying M Coffee – Flying M Coffee and Market will reflect the streetside experience and effortlessly meet the needs of travelers. Breakfast sandwiches, overnight oats, avocado toast and loaded burritos will delight the morning crowd, while hot and cold sandwiches, salads, dessert and options for kids will satisfy all preferences across dayparts.

“Flying M Coffee captures the unique Boise energy with our quirky spaces and colorful aesthetic,” said Flying M owners Adam and Chloe Hanson. “We are excited to welcome travelers to our hometown with our signature coffee blends served at two spaces that reflect our local personality. We are proud to represent the Boise coffee scene in the airport!”

  • The Idaho Taphouse – The Idaho Tap House will be a full-service restaurant and bar that celebrates Idaho’s thriving craft beer scene. This concept is a culmination of our partnership with Idaho Brewers United, a trade organization that represents craft breweries across the Gem State. The Idaho Tap House will deliver a rotating selection of local craft brewers’ best — from Woodland Empire Ale Craft’s juiciest IPA to White Dog Brewing’s crispest pilsner.

Concourse C:

  • Form + Function – A sleek, inviting third-wave coffee shop offering an elevated ambience along with extraordinary coffee. The main attraction of the Form & Function Coffee menu will be its exceptional beverages. Form & Function has built its brand on quality, and the BOI experience will reflect that quality in the pull and pour of every drink. In addition, the food menu at this location will be full of coffeehouse classics, elevated to meet the preferences of Alaskan Airlines travelers.

“Growing up in the Valley meant BOI was our portal to the outside world. When we created Form & Function Coffee, our access outside of the Valley was critical to allowing us the opportunity to experience other cities and cultures,” said Scott and Kate Seward, owners of Form + Function Coffee. “Whether it was flying to the East coast to bring back tastes of the old world, the West coast to stay in lockstep with the cutting edge of specialty coffee, or flying around the globe to India to bring back our signature Chai recipe, BOI has always been our first and last stop. It will truly be an honor for Form + Function Coffee to be a part of other’s experiences as they leave on new adventures or finally return home.”

  • Turas Flights and Bites by Telaya Wine Co. – Turas Flights & Bites, a wine bar created exclusively for BOI, will tell the story of Boise’s unique urban wineries. “Turas” means journey in Irish Gaelige. Turas Flights & Bites will take travelers on a Boise-inspired journey with wine from Telaya Wine Co. and other local wineries, plus Basque-inspired small plates.
