Delaware North Australia highlighted in 25th anniversary piece on Marvel Stadium

Marvel Stadium, where Delaware North Australia has served as hospitality partner since the stadium opened in 2000, recently was the featured cover story by Spice magazine, an Australian news source and quarterly print publication highlighting event industry news, case studies, educational articles, profiles of industry professionals and more.

The cover features an incredible drone photo of Marvel Stadium, which hit a record guest attendance for sports and entertainment events in 2024. That same year, Marvel Stadium unveiled $225 million in enhancements, transforming event spaces while bringing in new chef-driven experiences, local flavors and eateries celebrating the region’s culture.

Earlier this year, the Australian Football League also announced a continued partnership with Delaware North at Marvel Stadium.

Dushyant Bhati, executive chef for Delaware North at Marvel Stadium, leads the culinary team responsible for bringing the vibrancy of Melbourne to life through food and beverage offerings at the venue.

Excerpts from the article are below. The full story can be accessed in the magazine’s digital edition here.

Marvel Stadium general manager Scott Fitzgerald says the intention behind redevelopment goes well beyond logistics.

“We’re not just hosting events,” he says. “Our aim is to create experiences that deliver impact through seamless execution, elevated dining and considered design. Melbourne is the epicenter of business events in Australia, and Marvel Stadium is proud to play a leading role in showcasing the innovation and excellence this city is known for.”

In 2025, Marvel Stadium has unveiled three new destination restaurants, each led by an acclaimed Victorian chef. Among the dining experiences at Altis by Stephen Nairn of Yugen Dining and Omnia; a reimagined Lee Ho Fook by hatted chef Victor Liong; and the newest offering, Stoke-Grill, by Jason Staudt and the team behind Melbourne institution Stokehouse.

While each restaurant offers a distinct identity, all share an ambition to push the boundaries of stadium dining. Spearheaded by executive chef Dushyant Bhati – from Delaware North, Marvel Stadium’s long-term hospitality partner – the venue’s new food directions champions local ingredients and spices, paying homage to Victoria’s rich produce while embracing the diverse culinary traditions that define Melbourne’s identity.

The result is an evolving menu that brings multicuisine experiences to the stands – vibrant, bold and authentically Melbourne.
