With the Buffalo Bills hosting their first NFL playoff game in 25 years this weekend, Delaware North Sportservice, which provides food, beverage and retail services at Bills Stadium, jumped into action this week to prepare to safely serve a limited number of fans attending a game for the first time this season.
Because of the limited nature of fan attendance, Stephen Forman, executive chef for Delaware North at Bills Stadium, and Bill Wilde, concessions manager at the stadium, provided a selection of gameday tailgate recipes for Bills fans planning to watch the game from home.
Buffalo Chicken Dog
1 ea. Sahlen's hot dog
1 ea. Costanzo hot dog bun
1 oz. chopped, cooked chicken breast
1 oz. blue cheese dressing
1/2 oz. Frank's hot sauce
- Cook hot dog in sauté pan over medium heat.
- Combine chicken, blue cheese and hot sauce in mixing bowl.
- Place hot dog in bun and top with Buffalo chicken mix.
- Enjoy!
BBQ Jalapeño Bacon Burger
1 ea. 4oz burger patty
2 oz. BBQ sauce
1 ea. slice of cheddar cheese
2 ea. slices jalapeño, fresh
2 ea. slices bacon, cooked
1 ea. potato burger bun, toasted
TT salt and pepper
- Season both sides of the beef patty with salt and pepper (to taste).
- On a cast iron skillet over medium heat, sear beef patty on one side for 2 minutes.
- Flip patty and sear the second side for 2 minutes.
- As the patty cooks, reduce heat to low, allowing the patty to cook to internal temperature of 165F.
- Add the BBQ sauce to the patty and add the slices of jalapeño.
- Place the slice of cheese on patty then place the burger on the bun.
- Enjoy!
Chicken Wing Dip
4 oz. chopped, cooked chicken breast
2 oz. diced onion
2 oz. diced celery
1 ea. garlic clove, minced
2 oz. Frank's hot sauce
2 oz. cream cheese
2 oz. cheddar cheese, shredded
2 oz. whole butter, unsalted
- In a medium sauce pan, cook onions, celery, and garlic in 1 oz. of butter for 2 minutes.
- When vegetables are tender and translucent, add cream cheese and cheddar cheese and continue to cook at low heat.
- Once the cheese has melted, add your hot sauce and chicken. Stir ingredients until thoroughly incorporated.
- Transfer dip into a serving bowl and serve warm with your favorite chips!
Pico Pretzel
1 ea. soft pretzel
2 oz. queso cheese
1 ea. medium tomato
1/2 ea. jalapeño, minced
1/2 ea. lime
1 T chopped cilantro
1 Tsp. garlic, minced
1 T chopped red onion
1 oz. jalapeño jack cheese, shredded
TT salt and pepper
- Warm queso on stove or in a microwave safe bowl.
- Warm the Pretzel in a pre-heated oven at 350F degrees for 5 minutes.
- Dice your medium tomato and place in a mixing bowl.
- Add the garlic, onion, jalapeño, and cilantro to the tomato.
- Zest ½ of the lime over mixture, and then squeeze the lime juice into the tomato mixture.
- Add salt and pepper to taste. Pico should taste fresh and zesty with a little heat.
- Place warm pretzel on a plate and drizzle the warm queso cheese over the pretzel. Top with pico mixture. Finish by sprinkling the shredded jalapeño jack cheese.
- Enjoy!

1 oz. vodka
1 oz. fresh lime juice
2 oz. ginger beer
Chilled champagne or Prosecco
- Pour 1 oz. vodka & fresh lime juice into a champagne glass.
- Top with 2 oz. ginger beer.
- Pour champagne to fill glass & enjoy!
Blue Collar Cocktail
2 oz. orange juice
1 oz. gin
Labatt Blue
- Combine orange juice & gin in an 8 oz. pint glass filled with ice.
- Top with Labatt Blue & enjoy!

- Fill champagne glass 1/4 full with orange juice.
- Top with beer & enjoy!
