Position: President, Patina Restaurant Group

Dana Pellicano, a hospitality industry executive with more than 25 years of experience, serves as president of Patina Restaurant Group. 

As a wholly owned division of Delaware North, Patina Restaurant Group operates premium street-side restaurants and catering services in locations such as New York City, Los Angeles and Boston. It also operates signature restaurants at Walt Disney World in Florida, both at EPCOT and Disney Springs, and at Downtown Disney in California.   

In her role, Pellicano leads Patina Restaurant Group’s global business, including strategy and implementation, exploration of new opportunities, and development of talent throughout the organization. Among other responsibilities, she focuses on major revenue and profit streams, client and consumer requirements, and product and concept innovations.

Pellicano’s love for the food and beverage industry began with her first job as a prep cook in a pizzeria in her hometown of Bloomfield, N.J. Throughout her professional career, she has continuously held roles of increasing responsibility and scope for highly regarded restaurants in New York City and hospitality corporations such as Batali & Bastianich Hospitality Group, Loews Hotels and Marriott International.  

In May 2022, Pellicano joined Delaware North after more than 15 years in successive leadership roles with Marriott International – most recently serving as vice president of global food and beverage operations. While in that position, she oversaw foodservice operations across the organization’s more than 12,000 total outlets – a mix that includes fine-dining, casual, quick service, concierge lounges, and meeting and event catering spaces. 

Pellicano earned a bachelor’s degree in international studies at Fordham University and a postgraduate degree in food studies at New York University. She is an adjunct lecturer at the Jonathan M. Tisch School of Hospitality at New York University, where she teaches entrepreneurship in restaurants and bars.
