Hospitality company bringing Skewers restaurants to airports across the country
BUFFALO, N.Y. (Nov. 2, 2009) – Delaware North Companies, a global leader in hospitality and food service, has teamed up with celebrity chef Masaharu Morimoto to develop new fast-casual airport restaurants across the country.

The new restaurant concept, Skewers, will feature yakitori-style meals. That is, skewered meats with vegetables grilled and fried and served with rice bowls. Yakitori is popular as street and bar food in Japan, but is little known in the United States.

Soups and salads will also be on the menu, which is intended to offer fare that is convenient, tasty and healthy.

“The restaurant will provide travelers with a unique Asian dining experience and connect them with Morimoto’s fabulous interpretation of Japanese cuisine,” said Matt King, president of Delaware North Companies Travel Hospitality Services.

Delaware North’s travel hospitality division operates restaurants and retail stores in major U.S. airports such as Los Angeles International Airport, Detroit Wayne County Metropolitan Airport and Newark Liberty International Airport. Delaware North also operates in several international airports, including Heathrow and Gatwick in London and Melbourne Airport in Australia.

King said Delaware North anticipates opening Skewers locations at a few larger airports in 2010, with more to follow.

“It has been exciting for Delaware North to work with Chef Morimoto and develop Skewers. We think this will be a world-class airport restaurant that people will seek out when they travel,” King said.

Morimoto is the owner and operator of Morimoto Restaurants in New York City and Philadelphia. He has gained celebrity status by starring in the Food Network’s “Iron Chef” and “Iron Chef America” shows.

“Everyone knows I love a challenge,” Morimoto said. “As soon as my name appears in airports, I know I’ll be counted on to deliver the quality food that all of my operations serve. With Delaware North as my partner, I am confident that I’ll rise to the occasion.”

Airports of all sizes will be suitable for Skewers. The restaurant can be developed in a 1,000-square-foot space, serving meals that are easily portable for travelers boarding flights. The restaurant can also be built with a comfortable dining area in a 2,400-square-foot space.

Delaware North’s partnership with Morimoto represents the company’s continued effort to enhance its brand portfolio. In the past year, the company entered into strategic partnerships with such recognized brands as The Coffee Bean & Tea Leaf, Heineken, Sports Illustrated, Guinness and the Travel Channel.

Delaware North handles all manner of food service, including the operation of restaurants, concessions and premium dining in sports stadiums, entertainment venues, national parks, resort hotels and airports. Among its 200 locations are Wembley Stadium in the United Kingdom, Soldier Field in Chicago and Yosemite National Park.
About Chef Masaharu Morimoto
Born in Hiroshima, Japan, Iron Chef Japanese Masaharu Morimoto trained in a sushi restaurant before moving to the United States in 1985 at the age of 30. After working in several restaurants, he joined the highly acclaimed Nobu restaurant in New York City. Morimoto polished his craft in New York's melting pot and became a state-of-the-art world chef. His cutting-edge cuisine attracted the attention of the Food Network’s “Iron Chef,” and his skill has since been recognized all around the world. While his cooking has Japanese roots, it's actually "global cooking" for the 21st century. His unique fusion cuisine takes advantage of Japanese color combinations and aromas and uses Chinese spices and simple Italian ingredients, while maintaining a refined French style of presentation. Morimoto opened his own restaurant, Morimoto, in Philadelphia in 2002 and a second one in New York City in 2006.
