Patina Catering previews its GRAMMY Celebration menu

For the second year in a row, Patina Catering – a division of Delaware North’s Patina Restaurant Group – will serve nearly 5,000 esteemed guests at The Recording Academy’s official GRAMMY Celebration. The celebration is the official after-party of the 59th annual Grammy Awards, which will take place on Feb. 12.
 
Patina Catering’s menu takes an imaginative and fantastical approach to the evening’s theme, “A Midsummer Night’s Dream.” It includes four stations inspired by the mystical, fairy-inhabited forests and enchanted settings portrayed in Shakespeare’s famous play.
 

  • grammy_midsummer_nights_dream-6075135“Forest Foraged,” a primal exploration of the forest’s culinary offerings, will feature highlights such as baby crudités with local crudités, black bean hummus, and pumpernickel soil; wood-grilled beef sirloin skewers with arugula chimichurri sauce; and red quinoa with Medjool dates, roasted sweet potato, mustard greens, and warm sage vinaigrette.
  • The “Mystical” station will hold playful bites with delicate edible flowers and soft herbs, such as ambrosia fruit salad with winter citrus, walnuts, pineapple, and marshmallow; crispy yucca root fries with banana ketchup; and baked three-cheese mac & cheese.
  • At the “Enchanted Gala” station, guests will delight in earthy plates such as the Scarborough Farms baby field greens with lemon vinaigrette and crispy root vegetable ribbons and red wine braised short rib with crispy shallot rings and natural jus.
  • “The Fairy’s Land” station will be a colorful array of fantastic sweets, petit fours, and candy, such as the vegan coconut verines with tapioca-mango passion sauce, tropical fruit, and super seed brittle; tarts in flavors such as caramel chocolate, lemon meringue, apple vanilla, and apricot almond; and the fantastical, smoking dragon’s breath in bubble gum, rose water, and cotton candy flavors.

 
“I am in awe of all the talented performers nominated this year and want to create a menu that honors them and the music industry as a whole,” said Joachim Splichal, founder and chef of Patina Restaurant Group. “Our goal is to immerse guests in A Midsummer Night’s Dream with a menu featuring earthy textures, delicate floral and herbal details, and a colorful spread of enchanting treats.”

In addition to catering the 2017 GRAMMY Celebration, Patina Restaurant Group is also honoring the nominees by serving GRAMMY-inspired cocktails at four of its Los Angeles-based restaurants: Nick & Stef’s Steakhouse, Ray’s & Stark Bar, Café Pinot, and Kendall’s Brasserie. From now through the evening of the awards, guests can sample cocktails inspired by the awards show’s Album of the Year nominees. The creative concoctions include Becky’s Lemonade, inspired by Beyoncé’s “Lemonade,” a bold and refreshing twist on a whiskey smash; Love in the Dark, inspired by Adele’s “25,” which combines activated charcoal and lavender syrup; and Strength and Guidance, inspired by Drake’s “Views,” a winter twist on an old-fashioned.
